With this in mind, however  , this vegetarian recipe is a bit different from the traditional Andalusian recipe. The two biggest differences to note are:

  • This recipe contains no tomatoes.
  • It also does not contain any cucumber or pepper of any kind.

Recipe for asparagus gazpacho

Asparagus

Asparagus is a vegetable and an herbaceous plant. There are different types of asparagus. For this recipe we will use  green asparagus, which is known to have many health benefits.

Asparagus replaces tomatoes in this recipe. The taste of asparagus is good along with the other ingredients without overpowering their flavor.

Ingredients for asparagus gazpacho recipe

  • 1 bunch green wild asparagus (180 g)
  • 1 boiled egg
  • 1 clove of garlic
  • 1 tablespoon white wine (15 ml)
  • 500 ml of filtered water
  • 1 large potato or 2 between potatoes (180 g)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 2 tablespoons sherry vinegar (30 ml)
  • 1 tablespoon salt (15 g)

Course of action

  • Begin by  rinsing the asparagus thoroughly. Sometimes there is soil on the asparagus, so make sure you have cleaned them properly.
  • Then finely chop the asparagus. Save the tips. Set the tips aside.
  • Then add a few drops of olive oil to a pan. When hot, sauté the asparagus slightly until you can begin to smell them.
  • Then add asparagus, wine, water and garlic to the blender.
  • Blend it until it is more or less smooth and creamy.
  • Then pass the mixture through a sieve.
  • Now add the yolk from the boiled egg, salt and sherry vinegar. Blend or whip again.
  • Pour in the olive oil and refrigerate.
  • Peel and slice the potatoes. Put a little oil in a pan and fry the potatoes.
  • Once fried, add the saved tips of asparagus and fry them too.
  • Finally, slice the egg whites to make a beautiful garnish for the delicious gazpacho of asparagus.

Lastly,  if you want to make this recipe vegan, just omit the egg. Bon appetit !
