Recipe for asparagus gazpacho

Asparagus replaces tomatoes in this recipe. The taste of asparagus is good along with the other ingredients without overpowering their flavor.
Ingredients for asparagus gazpacho recipe
- 1 bunch green wild asparagus (180 g)
- 1 boiled egg
- 1 clove of garlic
- 1 tablespoon white wine (15 ml)
- 500 ml of filtered water
- 1 large potato or 2 between potatoes (180 g)
- 2 tablespoons extra virgin olive oil (30 ml)
- 2 tablespoons sherry vinegar (30 ml)
- 1 tablespoon salt (15 g)
Course of action
- Begin by rinsing the asparagus thoroughly. Sometimes there is soil on the asparagus, so make sure you have cleaned them properly.
- Then finely chop the asparagus. Save the tips. Set the tips aside.
- Then add a few drops of olive oil to a pan. When hot, sauté the asparagus slightly until you can begin to smell them.
- Then add asparagus, wine, water and garlic to the blender.
- Blend it until it is more or less smooth and creamy.
- Then pass the mixture through a sieve.
- Now add the yolk from the boiled egg, salt and sherry vinegar. Blend or whip again.
- Pour in the olive oil and refrigerate.
- Peel and slice the potatoes. Put a little oil in a pan and fry the potatoes.
