Delicious Recipe For Paella

Recipe for paella: Two delicious variations
1. Valencian paella
The queen of all paellas and one of the most famous Spanish dishes in the world. People are often confused about “Valencian paella” because many different types of rice are used.
Traditional Valencian paella – the one in the recipe below – contains rabbit, chicken and beans. It is different from seafood or mixed paella, which is a mixture of seafood and chicken. Try this paella recipe – your diners will thank you!
Ingredients for 4-6 servings
- 2 cups rice (400 g)
- 1/2 red pepper (30 g)
- Salt and pepper to taste
- 4 cups chicken broth (1 l)
- A medium-sized tomato (60 g)
- 1 sprig of rosemary
- Extra virgin olive oil
- 1/2 chicken, cut into pieces
- 1/2 rabbit, cut into pieces
- 1 handful of string beans (80 g)
- 1/2 cup white beans (100 g)
- 1 teaspoon paprika (5 g)
- A few strands of saffron (you can replace this with yellow fruit color, but it is not recommended)
Preparation
- Fry the chicken and rabbit meat in a paella pan (a large, deep frying pan) with olive oil.
- When the meat is lightly browned on all sides, add the string beans and stir for a few minutes. Make sure they do not burn on.
- Cut the tomato into small pieces and add it along with the white beans.
- Then add the paprika and mix it well with the other ingredients. Fry it for a few minutes.
- Add chicken broth, saffron, rosemary, salt and pepper, and turn up the heat.
- While it is boiling, add the rice and let it sit. You can add salt to taste.
- Cut the red pepper into strips and add to the pan.
- When the water has almost completely evaporated, turn down the heat. Then cover it with a lid or aluminum foil and let it cook for another 10 minutes over low heat.
- Once the rice has been cooked through, you can turn off the heat and let the paella stand for 10 minutes. You can now serve your paella. You see, with this recipe for paella, Spanish food is easy to make!
2. Seafood paella

Ingredients for 4 people
- 2 cloves Garlic
- 1 onion (60 g)
- 1/2 kg squid
- 1/2 kg fresh shrimp
- 1 medium tomato (60 g)
- 1/2 red pepper (30 g)
- 2 cups rice (400 g)
- 4 cups seafood broth (1 l)
- 1/2 cup peas (100 g)
- 1 tassel fresh parsley
- Olive oil, salt and pepper to taste
- Yellow fruit color or saffron threads.
- 1 handful of seafood / mussels (150 g)
Preparation
- Start by cleaning and peeling the prawns. Be sure to save the shells and heads for the broth. Boil them in 1 liter of water to make the broth.
- Clean the squid well and cut it into rings . Wash the shells with plenty of water so you get all the sand out.
- Add olive oil to a large frying pan. Fry peppers, diced tomatoes and onions, then sprinkle with salt and pepper.
- Add the squid and seafood. Cook it for a few minutes until it starts to make a broth.
- Pour in two cups of rice and mix well. Then add 4 cups of fish broth that you made earlier from the shrimp heads. You can add some more water if needed.
- While it is boiling, add a teaspoon of yellow fruit color or saffron and let it cook for 3 minutes.
- Add the fresh peas, shrimp, and chopped parsley while still having liquid in the pan. Add salt and pepper to taste.
- When the liquid has almost evaporated, add a few strips of red pepper and shells as decoration on top.
- Lower the heat, cover the pan and let it cook for 15 minutes over low heat until the rice is soft. Sprinkle with olive oil and serve.
