Ingredients:
- A medium pumpkin
- Olive oil
- 1 small onion
- 1 leek
- 2 garlic cloves
- Coriander or other herbs (to taste)

- 1 pinch of salt
- 1 potato or 1 ripe apple
- 6 cups vegetable broth (1500 ml)
- 1 yogurt natural (125 g)
- Nuts, feta cheese or tofu (to taste) (optional)
Preparation
- First peel the pumpkin, take out the seeds and cut the meat into small pieces. Saute in olive oil and save for later.
- Saute onion, leek and chopped garlic and then add herbs, salt and pepper. Add pumpkin and potato or chopped apple.

Preparation
- Wash and cut the leeks into pieces.
- Cut onion julienne and sauté in olive oil.
- Add the leeks and continue to sauté.
- Add salt and pepper and then potato or chopped apple.
- Then add vegetable broth and cook until tender.
- Then yogurt is added and the soup is pureed.
- When serving, sprinkle nuts and finely chopped basil on top.
Vegetable soup
Ingredients
- 2 leeks
- 1 large zucchini
- 1 carrot
- Olive oil
- 2 cups spinach (60 g)
- Pepper and a pinch of salt
- 4 cups vegetable broth (1 liter)
- 1 natural yogurt (125 g)
- Nuts to taste (optional)
- Freshly chopped basil to taste (optional)
Preparation
- Leeks, courgette and carrot are cut into pieces and sautéed in olive oil,
- Also add chopped spinach, salt and pepper and continue to sauté slightly over medium heat.

- Add yogurt and puree until you have the desired consistency,
