Ingredients
- 120 g broccoli
- 120 ml of water
- 3 tablespoons red wine (45 ml)
- 1 tablespoon salt (15 g)
- 1 tablespoon extra virgin olive oil (15 ml)
- 1/2 onion (50 g)
- 1 tablespoon pepper (15 g)
- 1 egg
- 1/2 tablespoon cumin (8 g)
- 1 tablespoon milk (15 ml)

Preparation
- First remove the stems from the broccoli.
- Then place the broccoli in a saucepan with enough water to cover the broccoli and then place the saucepan on the stove over medium heat.
- After approx. five minutes, say the broccoli and hold it under the cold tap.
- Then place the broccoli in a blender with onion, red wine and olive oil. Blend until it becomes a paste.
- Then add salt, pepper, cumin, eggs (to make it thicker) and milk. Blend again.
- Finally it comes in a bowl and is served with some wholemeal bread or biscuits!
2. Vegan cucumber pâté
Cucumber is a vegetable rich in dietary fiber and vitamins A, B, C and E. It also contains important minerals such as potassium, iron and phosphorus.
In addition, cucumbers are ideal for skin care as they are loaded with antioxidants that protect us from free radicals.
Cucumbers also help strengthen connective tissue in the body, help prevent cardiovascular disease and contribute to good digestion by improving the movement of digested food through the intestines.
Ingredients
- 1 large cucumber (200 g)
- 1 tablespoon cornstarch (15 g)
- 2 tablespoons vinegar (30 ml)
- 1 tablespoon salt (15 g)
- 2 cloves garlic (3 g)
- 60 ml white wine
- 1/2 onion (50 g)
- 2 green peppers (40 g)
- 1 tablespoon pepper (15 g)
- 1 tablespoon extra virgin olive oil (15 ml)
Preparation
- First, wash the cucumbers well and cut them into medium-sized pieces.
- Then cut onions, green peppers and garlic clove into small pieces. Saute them with a little olive oil
- Then place the cucumber pieces, the sautéed vegetables and wine in a blender. Blend at medium speed.
- Now add cornstarch, salt, pepper and vinegar to the blender. Blend again at medium speed until it becomes a paste.
- Finally, serve it and spread it on biscuits or bread or serve it with seafood.

3. Vegetable pâté with eggplant
Eggplant is an important vegetable for any balanced diet. It is also perfect for making vegetable pâtés.
Eggplant contains antibacterial and antiviral properties, and it is also a diuretic rich in fiber and folic acid.

- 1 eggplant (250 g)
- 2 cloves garlic (3 g)
- 1 tablespoon chopped parsley (15 g)
- 1 tablespoon lemon juice (15 ml)
- 3 tablespoons Greek yogurt (45 g)
- 1 tablespoon salt (15 g)
Preparation
- First cut the aubergine into medium-sized pieces and put them in a blender.
- Then add lemon juice and Greek yogurt and blend on medium speed.
- Then add garlic, parsley and salt. Blend again until it becomes a thick paste.
- Finally, it is served in a bowl with bread, biscuits, celery sticks or carrot sticks.
